Buffalo Chicken Stuffed Sweet Potato

This recipe is from my friend, and fellow Arbonne teammate Margo Lloyd. She is a wizard in the kitchen and I am always in aw of what she creates!


This recipe went viral on Instagram, and it’s so simple yet so satisfying. I love anything and everything buffalo sauce, so this hits the spot. It’s giving sweet and spicy vibes. My shredded chicken is so easy to make and comes out perfect every time. You can easily meal prep this Buffaloe Chicken Stuffed Sweet Potato recipe for the week as well.

Bake to Potatoes:

Preheat oven to 400 degrees. Wash and dry sweet potatoes. Add to a baking sheet and lightly prick with a knife. Rub with avocado oil and sprinkle with salt. Bake for one hour until tender. Once they are done, slice down the middle and let the steam escape for a few minutes before serving. I also love to add a tbsp of salted butter and a sprinkle of s&p to the inside of the potatoes before stufing them with chicken.


Make the Buffalo Sauce:

Mix buffalo sauce and 2 tbsp of grass-fed butter. Warm up in the microwave or saucepan and set aside. Pour mixture over shredded chicken and mix well.


Assemble Sweet Potatoes:

Stuff the sweet potatoes with the shredded chicken mixture. Top with green onions, cilantro, feta cheese crumbles, and drizzle with your favorite ranch dressing.
